This is an ancient variety of wheat that has been grown in the arid regions of the Southwestern United States and Northwestern Mexico for around half a millennia. It has only fallen out of favor in recent years because agricultural companies rather using less efficient but more uniform modern varieties of wheat, however this variety is much more economical anywhere it is grown because it is extremely drought tolerant and grows very quickly. It can be grown year-round in low frost climates and has a production time from seed to harvest of around 90 days. In frost prone climates this is best sown 90 days before frosts begin to ensure that the crops have enough time to fully develop. This plant has edible grains that can be processed into wheat flour that has a much lower gluten content than traditional wheat. This makes it ideal for people who have issues with gluten or wish to have wheat products without as much gluten. This plant is very drought tolerant, but can handle extra water.
